गाय एक पालतू पशु है। गाय सफेद, काली, भूरी या चितकबरी कई रंग की होती है। गाय की पूँछ लम्बी होती है, जिससे वह अपने शरीर पर बैठने वाली मक्खियों को उड़ाती है तथा सींगों से अपनी रक्षा करती है। भारतीय हिन्दू इसे आदर की दृष्टि से देखते हैं और इसे ‘गो-माता’ कहते हैं। गाय स्वभाव से बड़ी सरल और भोली होती है। यह घास खाती है। घास के अतिरिक्त इसे खली, चने, बिनौले और भूसा भी खिलाया जाता है। इनसे वह दूध अधिक देती है।

गाय अत्यन्त लाभदायक पशु है। यह हमें दूध देती है। गाय का दूध आरोग्यदायक, स्फूर्तिदायक और शीघ्र पचने वाला होता है। दूध से ही दही, मक्खन, घी, मट्ठा और मावा बनाते हैं। मावे से अनेक प्रकार की मिठाइयाँ बनाई जाती हैं। गाय का गोबर घरों को लीपने, उपले बनाने तथा खाद के काम आता है। गाय के मूत्र में अनेक रोगों की रोगनाशक शक्ति होती है।

गाय के बछड़े बड़े होकर बैल बनते हैं। वे हल चलाने तथा गाड़ी चलाने के काम आते हैं। इसकी खाल के जूते बनाये जाते हैं। सींगों से सरेस बनता है तथा हड्डियों से खाद बनाई जाती है। अतः हमें गाय की सेवा और रक्षा करनी चाहिए।

गायें कई रंगों की होती हैं। कोई सफेद होती है तो कोई काली। कोई भूरी होती है तो कोई चितकबरी। उसकी चार टाँगें और चार थन होते हैं। उसके दो सींग होते हैं। जिनसे वह अपनी रक्षा करती है। उसकी एक लंबी पूँछ होती है, जिससे वह अपने शरीर पर बैठी मक्खियों को उड़ाती है।

गाय घास, भूसा और दाना खाती है। कई लोग उसे रोटी तथा खरबूजा आदि फल भी खिलाते हैं। पहले वह भर पेट चारा खाती है, फिर वह खूब जुगाली करती है। जुगाली करते समय उसके मुँह से सफेद झाग निकलती है।

गाय हमें दूध देती है। दूध पीने में स्वादिष्ट और शक्तिवर्धक होता है। दूध से दही, पनीर, मक्खन और घी बनता है। गाय का दूध पीले रंग का होता है। अतः गाय के दूध से बनी मिठाई पीले रंग की होती है और इसका मक्खन भी पीले रंग का होता है।

गाय के बच्चे बड़े होकर बड़े काम आते हैं। गाय की बछिया बड़ी होकर गाय बन जाती है। गाय के बछड़े बड़े होकर बैल बनते हैं और खेत में हल चलाने के काम आते हैं। हमें गाय की सेवा करनी चाहिए।

परिचय : गाय रीढ़धारी स्तनपायी पालतू चौपाया जानवर है। हिन्दू इसे आदर की दृष्टि से देखते हैं।

आकार : इसके चार पैर, दो कान, दो सींग, दो आँख एवं एक लम्बी पूँछ होती है। इसके खुर दो भागों में बँटे होते हैं। इसकी लम्बाई चार-पाँच हाथ तक होती है। गाय कई रंगों की होती है। जैसे- सफेद, मटमैली, काली और चितकबरी आदि। काली गाय ‘श्यामा’ कहलाती है।

भोजन : गाय घास, भूसा, चोकर तथा बिचाली खाती है। यह किसी वस्तु को चबाकर नहीं खाती है बल्कि उसे निगल जाती है । बाद में निगली हुई वस्तु को चबा-चबाकर पागुर करती है।

उपयोगिता : गाय हमारे लिए बहुत उपयोगी है। इसका दूध अमृत तुल्य होता है। दूध से घी, मक्खन, मट्ठा, छेना, मलाई, खोवा तथा अनेक वस्तुएँ बनायी जाती हैं। इसके गाय के गोबर से उत्तम खाद एवं उपले बनते हैं। गाय के मरने के बाद भी उपयोगी है। इसके सींग और हड्डी से बटन और छुरी की बेंट बनती है। चमड़े से जूता, बैग आदि बनते हैं। गाय के नर बच्चे को बछड़ा कहते हैं। बछड़ा बड़ा होने पर बैल कहलाता है। बैल गाड़ी को खींचता है। वह हल जोता जाता है।

उपसंहार : गाय हमारी माता की तरह है। यह प्राचीनकाल से ही मनुष्य का उपकार करती आयी है। इसकी भली-भाँति देख-रेख करना हमारा परम कर्तव्य है।

गाय का बछड़ा बड़ा होकर बैल कहलाता है। बैल-गाड़ी खींचने, हल चलाने, बोझा ढोने आदि कामों में यह प्रयुक्त होता है। हमारे प्राचीन धर्मग्रंथों में गाय की बड़ी महिमा मिलती है। गौ-हत्या को बहुत बड़ा पाप माना गया है। सभी शुभ अवसरों पर हमारे यहाँ गोदान का विधान है।

परिचय और आकार-प्रकार

गाय एक चौपाया पशु है। इसके दो सींग, दो कान, दो आँखें और एक पूँछ होती है। पूंछ से यह हाथ का काम लेती है। यह इससे मच्छड़ और मक्खियाँ उड़ाती है। इसके पैरों में खुर होते हैं। गाय के शरीर की लम्बाई लगभग चार-पाँच हाथ और उँचाई अढ़ाई-तीन हाथ होती है। इसकी पिछली दो टाँगों के बीच में चार थन होते हैं जिनसे दूध निकलता है।

गायें सफेद, काली, लाल, चितकबरी आदि कई रंगों की होती हैं। संसार के विभिन्न देशों में भिन्न-भिन्न आकार-प्रकार की गायें पाई जाती हैं। किन्हीं देशों की गायें बिना कूबड़ की, किन्हीं की बिना सींग की और किन्हीं की लम्बी पूंछ वाली होती हैं।

प्राप्ति स्थान

गाय प्रायः सारे संसार में पाई जाती है। हर प्रकार की प्राकृतिक अवस्था वाले क्षेत्रों में गाय उपलब्ध होती है। आस्ट्रेलिया, अमेरिका, यूरोप आदि देशों में पाई जाने वाली गाएँ अधिक दूध देने वाली होती हैं। हमारे देश में हरियाणा, राजस्थान, पंजाब तथा गुजरात की गायें अच्छी नस्ल और दुधारू होती हैं।

स्वभाव

गाय सीधी सादी और सहज स्वभाव की होती है। यह अपने मालिक और बच्चों को बहुत प्रेम करती है। यह किसी को कष्ट और चोट नहीं पहुँचाती है। नन्हें-नन्हें बच्चे भी इससे घुलमिल जाते हैं। गाय अपने बच्चों को बहुत प्यार करती है। कुछ गायें अपने बच्चों के अभाव में दूध नहीं देती हैं।

खाद्य-पदार्थ

गाय शुद्ध शाकाहारी जानवर है। हरी घास और कोमल पौधे इसके प्रिय खाद्य-पदार्थ हैं। वैसे यह चोकर, अन्न, खली आदि भी बहुत चाव से खाती है। गाय खाद्य पदार्थ को सीधे निगल लेती है और फिर धीरे-धीरे जुगाली करके उसे पचाती है।

उपयोगिता

संसार में गाय सबसे उपयोगी जानवर है। गाय का दूध अमृत के समान महत्वपूर्ण है। उसमें जीवन-रक्षा के बहुत ही महत्वपूर्ण तत्व होते हैं। गाय का दूध हर अवस्था के व्यक्ति के लिए लाभकारी है। मरीजों के लिए तो यह अमृत के समान है। गाय के गोबर और मूत्र को हिन्दू बहुत ही पवित्र मानते हैं। गाय के गोबर से लीपी गई जमीन को देवी-देवताओं के पूजन तथा दूसरे धार्मिक कामों के लिए पवित्र माना जाता है। गोमूत्र अनेक रोगों को दूर करने के लिए प्रयुक्त किया जाता है। गाय के दूध से मलाई, रबड़ी, मक्खन, घी, पनीर, छेना आदि चीजें बनाई जाती हैं। गाय के गोबर से खाद बनाई जाती है, जो फसल के लिए बहुत ही उपयोगी होती है। इसके गोबर से उपले बनाये जाते हैं, जो जलावन के काम आता है। गाय के मरने के बाद इसके शरीर से अनेक उपयोगी चीजें बनाई जाती हैं। गाय के चमड़े से जूते, सूटकेस, थैले आदि बनाए जाते हैं। गाय की हड्डियों से कलम, चाकू के बेंट तथा अन्य चीजें बनाई जाती हैं। इसके सींग से कंघी, बटन, कलम, खिलौने, आदि वस्तुएँ बनती हैं। गाय के बछड़े बड़े होकर हमारे बड़े काम में आते हैं। वे हमारी गाड़ी खींचते हैं, हल जोतते हैं और बोझा ढोते हैं। बैल हमारी खेती की रीढ़ हैं। इससे यह प्रमाणित होता है कि गाय हमारे लिए कितनी उपयोगी है। माता जैसे अपनी संतान का पालन-पोषण और उससे प्रेम करती है वैसे ही गाय हमारे लिए करती है। अत: उसे ‘गोमाता’ कहना बिलकुल सही है।

उपसंहार

ऊपर कही गयी बातों से लगता है कि गाय वास्तव में हमारी माता है, देवी है, पूजनीया है। गोबध हमारे देश में सबसे निन्दनीय एवं जघन्य अपराध है। गाय की उपयोगिता देखते हुए हमें गोधन की रक्षा करनी चाहिए और उसकी वंशवृद्धि के लिए हर स्तर पर प्रयत्न करना चाहिए। गाय को केवल धार्मिक दृष्टि से ही नहीं, आर्थिक दृष्टि से भी रक्षा करने की आवश्यकता है।

गाय एक दुधारु पशु है। गाय एक घरेलू जानवर है। हिंदू लोगों द्वारा उसकी पूजा करते हैं और उसे "गौ माता" कहते हैं।

यह सफेद, गेरुए, काले या चितकबरे रंग की होती है। गाय एक चार पैरों वाला जानवर है। गाय के दो सींग होते हैं उसकी पूँछ लंबी होती है। उसके खुर फटे हुए होते हैं। दुनिया में गाय हर जगह पाई जाती हैं।

गाय घास, भूसा, दाना और खली खाती है। गाय हमें दूध देती है। उसका दूध मीठा, पचने में हल्का और पौष्टिक होता है। उसके दूध से हमें बहुत से दुग्ध उत्पाद जैसे मक्खन, घी, चीज़, दही आदि मिलते हैं। बहुत से लोग सोचते हैं कि यदि हम शुद्ध और ताज़ा दूध पाना चाहते हैं, तो गाय रखना बेहतर है। जूते और बेल्ट बनाने के लिए छिपाना का उपयोग किया जाता है। गोबर कृषि के लिए सर्वोत्तम है। इसका उपयोग गांवों में ईंधन के रूप में भी किया जाता है।

गाय के बच्चे को 'बछड़ा' या 'बछिया' कहते हैं। जब बछड़ा बड़ा होता है, तब उसे 'बैल' कहा जाता है और वे किसान के खेत की जुताई करते हैं। बैल गाड़ियां खींचते हैं, पुरुषों और सामानों का भार उठाते हैं और खेती के लिए खेत में हल भी खींचते हैं। कभी-कभी, बीज से तेल निकालने के लिए उन्हें पीसने वाले पेड़ पर रखा जाता है।

यह जानवर पूरी दुनिया में पाया जाता है। यह स्वभाव से कोमल है। यह हमें दूध देता है जो बहुत पौष्टिक होता है। दूध से, हम दही, मक्खन और पनीर बनाते हैं, जिससे फिर से हम विभिन्न प्रकार के केक और मीठे बनाते हैं।

It’s milk are very useful for us. We obtain butter, ghee, curds, cheese, etc. from milk. A cow is regarded as ‘mother’ and worshipped by the Hindus.

The cow has a strong and heavy body with four legs. Her body is covered with short hair. She has a pair of horns and a long tail.

Her eyes are big and beautiful. The feet are hoofed and the hoofs are split in the middle.

Cow-milk is very nutritious and easily digestible. This milk can be consumed in many forms. It is also available in powder form and condensed.

Cows have different colours. They are found everywhere in the world. Cow is a holy animal for Hindus.
