Sweet art: how to plate desserts like a pro

Daniel Fletcher, one of the UK's top pastry chefs, shares his top presentation tips for sweet dishes and talks about how new technology is changing the way desserts are served.

Unless you’re treating your guests to a cheeseboard , dessert is going to be the last course of any dinner party . This means it’s also probably the one most people are going to remember, so putting just a little extra effort in can make all the difference. Obviously it has to taste good, but even the most amazing dessert in the world isn’t going to excite the senses if it’s just thrown together on a plate.

That’s why presentation is of the utmost importance – something Daniel Fletcher knows all too well. He has worked in Michelin-starred kitchens across London, New York and Melbourne, creating desserts that look like works of art. However, he’s keen to stress flavour should always be a priority. ‘Presentation is key in all aspects of cooking,’ he says. ‘But I think there is a lot more freedom when it comes to pastry and desserts as there are so many different techniques that allow you to showcase the food in a variety of ways. They say you eat with your eyes, which I agree with to a certain extent, but for me the taste is more important. I like to think that guests will remember the amazing flavour of a dessert rather than how it looks.

‘One thing I always ensure when presenting a dish is to let the star ingredients shine,’ continues Daniel. ‘Don’t add too many other components, or you’ll mask the flavours you’re trying to create. I also think it’s important to try a few different plating styles and then to get the input of the chefs around you. Sometimes another point of view can give you a different perspective on the dish.’

Classical dessert presentation used to be quite simple, dainty and inspired by traditional French patisserie . But as the fine dining scene has rapidly grown in the UK, so too have the appearance of sweet dishes. ‘There are so many ways to present desserts today, especially with the invention of all the silicone moulds that can make any ingredient into any shape you want,’ explains Daniel. ‘Fifteen years ago when I started out, there was nothing like the amount of choice we have now; pastry was a lot more classical and a chocolate mousse could either be set in a ring or cut into a bar shape. These days you can have it in the shape of a rose, for example. Social media is also a huge help, as it allows chefs to share new techniques and styles with each other. The possibilities are endless.’

The gadgetry Daniel has access to in a professional kitchen also helps him remain consistent. ‘A Kitchenaid is always handy for mousses, meringues and anything that needs a good mix,’ he says. ‘Pacojets are also incredibly useful, as they allow you to churn ice creams and sorbets to order for the very best texture and freshness. Different moulds allow lots of creativity, and squeeze bottles are good for when you want to dress plates with precision.’ While some of the bigger pieces of equipment are more of an investment, picking up a few squeeze bottles or some specially-shaped moulds could make all the difference to your plating.

There are a few other tips Daniel has for the home cook looking to wow friends with their presentation technique. ‘Make sure you choose a suitable plate – not too large or small. Try to make the presentation as clean as possible, and use an ice cream scoop or good spoon to shape ice cream or sorbet. And don’t be afraid to take risks; be adventurous in your plating, let your creative side out and have fun with what you’re doing. A happy chef equals happy food!’

There are tons of different fruits that you can put on a fruit platter. The most important thing is that you add fruits that you like. Here are some fruits that we enjoy adding to our fruit platters:

How do you arrange fruit on a tray?

There are many methods to arrange a fruit tray, but the key is to plan ahead. If you start with a presentation idea, there’s a much better chance your fruit tray will turn out how you want!  We live to start by adding any items that will be in smaller dishes to our platter. Then, fill in empty space with clumps of fruit, spreading out the groupings of colors. The more fruit, the merrier!

Can I make a fruit platter the night before?

Yes! Most fruit will be fine overnight as long as you keep your fruit tray covered and in the fridge. Avoid adding fruits that have to be peeled on the tray overnight (such as bananas, apples, pears, etc.) I recommend adding those right before serving to avoid browning. If you have any dry elements on your platter (such as cookies, crackers, breads, etc) I would add those right before serving as well so they don’t get soggy.

Do you cut strawberries for a fruit tray?

You can, but it’s not necessary. If you do choose to cut them, I have found that halving them makes them bite-sized and easy to enjoy.

How do you cut an apple for a fruit tray?

I like to cut my apples into wedges so they are easier to eat. Make sure you remove the core and seeds from them before serving (for an easier experience for guests). Apple wedges are also easiest to dip in any fruit dips and sauces.

Is it cheaper to make your own fruit tray?

Generally, yes! If you buy your own fruit, you usually get more bang for your buck, and you can choose exactly what fruits you want on your tray. You’ll also have total control over the quality of the fruit, and you won’t have to settle for whatever comes pre-made.

What do you line a fruit tray with?

If you use a plastic, wooden, or metal tray, you don’t need to line it with anything before placing the fruit on it. Since most fruit has natural moisture and juice that will get onto the tray, it’s better to use a water-resistant tray and forgo a liner.

We decided to check this place out since the spot we had originally chosen for dessert was closed for the day. We walked in and there were a few people there. They don't have that many tables and almost all of them were being used with the exception of one. There was a girl manning the register and I saw three employees in the back. Right away I noticed that the inside felt dirty and it was super hot. We stood there looking at the menu and the cashier also stood there and just stared at us. Awkward. When I knew what I wanted, I stepped up and ordered. The cashier was not at all friendly and she had an attitude. We all placed different orders and we all received the same treatment from her. Yuck When my order was ready, she called out my name and I saw her slam my order on the counter and she just walked away. The dessert was way too sweet and the presentation of it in the box does not look very appetizing. The box itself is super cute though. My order consisted of three mini pancakes on a stick and the toppings were all cinnamon flavored. One of the toppings was pieces of cinnamon cereal which fell off once I took a bite. The table was sticky, dirty, and the floors felt that way when we walked around as well. The dessert was way too sweet for me, it was very hot inside, and the girls stinky attitude is enough to keep me away. This is a pass.

Wanted to try a new dessert place when visiting Chicago and friend saw this place on tiktok so decided to give it a try. I think this is the most recent location (there's a few in Chicago). Conveniently located next to our restaurants and stores. Place is a little small with some small tables and chairs maybe 10-15 ppl max? It was not busy at the time. Decided to try the Nutella Strawberry mini Eiffel. As you can see from the photo, it's essentially mini pancakes with Nutella, strawberry, banana, syrup and powdered sugar. The pancake, literally taste like pancake batter. Typical breakfast dish except mini pancakes. Definitely not worth the $12. Mediocre taste. Maybe the regular egg waffle is better or the ice cream. Not sure if it's worth coming back for the price tag. Unless they change up the batter for the "WOW feel. But the workers were nice so great job.

I've cream was good at first..until I found a hair in my ice cream! Service was awesome and quick, environment was really friendly, but was disgusted with the blond hair in my ice cream. I'm not even blonde!

The desserts are creative and unique, but lean towards being sickly sweet - with no water available in the restaurant to mitigate it. The presentation of my dessert was messy and somewhat unappealing, but my friends' Eiffel Cones looked pretty - although they also thought them to be too sweet. The service and ambiance were good overall, and I am glad I tried this restaurant, but I don't see myself paying another visit.

This place just recently opened up in Wicker Park so my friends and I wanted to try it out. The service was decent: they were able to get all of our orders out pretty quickly despite it being busy in the store. Eiffel waffle also had a very nice aesthetic/vibe. For dessert, I got the lotus lover waffle which I found overly sweet. I wasn't even able to finish the entire thing. If you come here, I would only recommend getting the ice cream here as the cinnamon ice cream I had with my waffle was very good.

I can say in my part I was happy how I was greeted nicely from the moment I step in . As well the price is very reasonable. The only complain that I would make is that they definitely need their air conditioning system was not working and it was to hot when I walked in. I felt so bad for the people that were working there. But great place to have Bubble Waffle or Shake .

Imagine you’re working on a report about the Monarch butterfly, and you’d like to include a creative visualization. In Microsoft Word, simply ask Copilot to " Create an image of a Monarch butterfly in a spring scene" . Be as descriptive as you can, and Copilot will generate a brand-new image based solely on your instructions.

Copilot uses Designer's Image Creator to create AI-generated images in Word Copilot, powered by an advanced DALL-E 3 model.

Tips for prompting generated images?  

Creating an image works differently than searching for stock images.  

Designer’s Image Creator works best when you’re more descriptive, so get creative and add details like adjectives, locations, or even artistic styles such as ‘digital art’ and ‘photorealistic.’  

Here's an example of a how to create a longer, more descriptive prompt:  

Original prompt: " Create an image of a lion ."

Descriptive prompt: " Create a close-up photo of a female lion in a vast grassland with multiple shades of green and brown .”

Copilot can suggest licensed stock images

Copilot can also step in to recommend licensed stock images that come with your Microsoft 365 subscription. Maybe you are creating a document for recipes with strawberries, but it could use some images. Simply ask Copilot to " Insert a stock image of a delicious dessert with strawberries " , and let Copilot find the right stock image for your document.
